Crispy Chilli Garlic Chickpeas

Chickpeas are a good source of protein and fiber and are very nutritious. They can be prepared in various ways from dry to gravies and each recipe is unique and flavourful. Chilli Garlic Chickpeas is a dry and crispy dish with a tangy and garlic flavour.The tangy flavour comes from a combination of spicy,hot and sweet sauces alongwith vinegar and garlic which makes it all the more flavourful. Serve it as a starter or as a side with chinese fried rice or noodles and enjoy.

Soak chickpeas overnight. Next day pressure cook it with 1/2 tsp salt upto 3 whistles. Open lid after pressure settles.Chickpeas should be perfectly cooked but should not be mushy.Drain water in a seive and pat dry boiled chickpeas.Cool and smear cornflour and 1/4 th tsp salt.Heat oil in a pan or wok,double coat and deep fry chickpeas till crispy.Strain excess oil and set aside.Remove excess oil.

Heat 2 tbsp oil in a pan.Add grated ginger,minced garlic and chopped green chillies.Fry till aromatic. Add cubed onion and capsicum and stir fry in high flame for 1 minute.Now add soya sauce,chilli sauce,hot and sweet tomato sauce,kashmiri red chilli powder,salt and sugar to taste and stir it well.Make a slurry of 1 tsp cornflour with 2 tbsp water.Add it to the pan and cook for a minute.

Add the fried chickpeas, vinegar and ajinomoto.Toss on low flame till the spices coat chickpeas.Drizzle water if the chickpeas are very dry.Sprinkle chopped coriander and toss. Spicy hot Crispy Chilli Garlic Chickpeas is ready to be served as a starter or as a side with chinese fried rice or noodles.
