Rinse 1 cup of dried black chickpeas and soak them overnight. In the morning, add 1 more cup of water and cook them in a pressure cooker. After the first whistle, reduce the heat to medium and cook for 4-5 more whistles so the chickpeas become very soft. Turn off the heat after 5 whistles.

Once the pressure cooker cools, drain the chickpeas. Heat oil in a skillet over medium heat. Add cumin seeds, asafoetida, red chili flakes, dried mango powder, and grated ginger. Add the drained chickpeas, a little more lemon juice, and salt. Mix well and sauté everything together. Turn off the heat.

Let the chickpeas cool. While they cool, finely chop the tomato, onion, and green chilies. In a bowl, combine the chickpeas with all the chopped ingredients.

Sprinkle chaat masala and squeeze lemon juice on top before serving. For extra flavor, you can add potato sticks or savory snack mix on top. Enjoy this tasty chana chaat for breakfast or as an evening snack with tea.
