Ingredients

  1. 1 cupBoiled/roasted and peeled sweet potatoes
  2. 1 cupHung curd
  3. 3 tbspjaggery or sugar
  4. 10-15saffron strands
  5. 1-2 tspmilk
  6. 2 tbsppistachios

Steps

  1. 1

    Firstly, Prepare hung curd by straining regular dahi and letting the entire extra water drop. It takes 6-8 hours in the refrigerator.

    Soak saffron strands in 1-2tsp milk. Keep it aside.
    Cut the boiled sweet potatoes into small pieces.
    In a grinding jar add sweet potato pieces and Jaggery. Blend until smooth and lump-free.

    In a big bowl add sweet potato paste and hung curd. Whisk until smooth and creamy.

    Now add the saffron milk and whisk again until creamy-velvety texture.
    Sweet potato Shrikhand is ready.
    Keep it in the refrigerator for 1-2 hours before serving

    Garnish with some pistachios and saffron. Serve chilled. Enjoy 😊
