Fry the thawed seafood in a pan with oil and salt for 5 minutes

Trim the ends of the green beans and chop. Add to the pan and sauté for another 5 minutes

Add the diced green bell peppers to the pan and cook for another 5 minutes

Grate the tomatoes, slice the garlic, add a teaspoon of sugar to reduce acidity, salt, and add to the pan. Cook for another 5 minutes over medium heat

Add 1 1/2 cups of short-grain rice and mix well with the other ingredients for a couple of minutes

Next, add twice the volume of fish stock or water and food coloring. When it boils, taste for salt and adjust. It should always be slightly salty as the rice absorbs it.

Cook over medium heat for 12-15 minutes until the rice absorbs the stock. If you run out of stock and the rice is still raw, lower the heat and cover the pan. Never add more cold water!

Let it rest for 5 minutes and serve. Enjoy your meal

We grow and dry our own saffron, so we can use lots when making seafood paella. You can order saffron online. Our little town butcher brings in fresh seafood in season every weekend, worth a trip. I also use frozen. A large wok with a lid is a great way to cook paella. Best enjoyed with chilled Tempranillo wine or Rose wine, and farm baked french bread, fresh grapes and friends.
