Romesco sauce - Mediterranean roasted red pepper sauce

I cooked this for @lindzi ‘s birthday 🎂 The whole party menu was planned by @Knivett (huge thanks!) and she asked me to try making this. I’m not very familiar with Mediterranean dishes, but that’s why it was fun and nice to try! And the result was amazing 😻 ❤️

Steps

Roast almonds in a frying pan for few minutes.

Drain the red peppers.

Add roasted almonds, sherry vinegar, smoked paprika powder and garlic clove into a bowl or pot.

Use a blender and crunch into paste. Add olive oil little by little and keep mixing.

It doesn’t need to be very smooth so that you can keep the texture. Dip with a piece of bread, meat or fish to enjoy!
