Sweet paprika prawns

I knew I wouldn’t be cooking for a while so I drafted a few recipes before I left Malawi 🇲🇼 for Italy 🇮🇹. Then I lost motivation to post them at all until the #Christmasgift challenge spark my excitement. There’s nothing I love more than gifting recipes; and what better way to do it than in an actual #Cookbook

Sweet paprika prawns

So here goes something! 😊

Rub a salt, pepper, some of the garlic, a little oil and paprika on the prawns in a bowl. Cover with cling firm and let stand for 10 - 20 minutes [PLEASE DO NOT USE UP ALL INGREDIENTS]

Heat oil in a pan over medium-high heat. Add garlic and sauté just until fragrant and soft

Quickly stir paprika powder into the garlic followed by the prawns. Let fry for 2 minutes on each side (DO NOT OVERCOOK). As you fry one side, sprinkle some parsley onto the top side, tilt the pan to scoop soon oil and drizzle it onto the top side. Reserve some parsley for garnishing

Squeeze lemon juice over the prawns. Take off heat and sprinkle over the remaining parsley/basil. Add more salt/pepper is desired

Serve with bruschetta, mashed potato, or just as a snack with wine
