Drain the water from the tuna.

Soak the guajillo chiles in hot water.

Squeeze the juice from the oranges.

In a blender, place the softened, seeded chiles, orange juice, a small piece of achiote, thyme, and oregano.

Strain the sauce and mix in the tuna, let it marinate for 30 minutes.

In a pan, add a splash of olive oil. Once hot, add the marinated tuna and season with salt to taste. Set aside.

Chop the onion and pineapple into small cubes.

In a dish, squeeze the limes and add a splash of vinegar, olive oil, and oregano. - 10
Slice the habaneros into strips using a fork, removing the veins.

Slice the red onion into strips.

Add the chiles and onion to the dish, mix well, and season with salt to taste and a bit more oregano.
