Chapati Spaghetti Omelette

Every time i think of Kenyan origin omellete,i get inspired to find new ways of preparing one.Here is a trial that i did and served my friends during my child Desmond dedication party.
They really enjoyed it and up to now they keep ordering it at least twice a week.

Cut chapatis into 1 inch square sizes on a chopping board,put on a plate and set aside

Pour the spagheti rolls on a boilig pan,add 1/2 cup of water ad 1/4 tablespoon salt and set it on fire to boil for a bout 8 mins.Put off fire and set aside the boiled spagheti.

Put cooking oil on a different pan and heat then add the chopped onions.Mix as they fry untill golden brown colour.

Cut tomatoes into flat circular shapes and heat in salty water for 2 minutes untill they are well cooked.Ensure no water remains.

Mix dry spaghetti and the fried onions in the egg chapati mixture in a bowl..Don't forget to add mango powder in the mixture as well.Mix well untill uniformity is attained.

Pour the mixture on a heated cooking oil in a wide non sticky frying pan.spread the mixture as you add the cooked tomatoes one by one evenly pressing them inside the mixture to ensure they fit deep inside the mixture.Turn the upper side to heat too in turns untill you obtain a golden colour. Put off the heat.

Your Chapati spaghetti omelette is ready to be served with Tea or any other nice drink.
