Ingredients

5 to 6 person
  • 1 bowlrice flour
  • 1 bowlwater (same bowl)
  • 2 tsp Kesar strands soaked in of water
  • 1 cupgrated fresh coconut
  • 3/4th cup grated jaggery
  • 1/4th tsp elaichi powder
  • As RequiredChopped cashews & rasins
  • As RequiredGhee
  • 1 pinchsalt

    First, soak a few Kesar strands in 2 tsp of water & keep it aside. Now heat a tadka pan, and add 2 tsp of ghee to it. When the ghee gets hot add the chopped nuts and raisins and fry them. Now keep them aside.

    Then we will prepare the coconut stuffing. For this, heat a pan, add 1 tsp of ghee then put the grated coconut in it and mix it. Then add the grated jaggery in it and mix it. Remember to keep the flame at its lowest throughout the process.

    Now cook the mixture for about 5 minutes. Then add fried nuts and raisins to it and mix it. Cook for 3 minutes more then add elaichi powder to it. Mix it well too.

    Now switch off the flame, before getting extra sticky. Your coconut stuffing is now ready.

    Now let's prepare the rice coating. For this take 1 small bowl of rice flour. Then in the same bowl take 1 full bowl of water. Now keep them separately aside. Now heat a pan add that measured water to it, and add a pinch of salt and 1 tsp of ghee in it.

    Let the water come to a boil, then switch off the flame & add the measured rice flour in it and mix it with a spatula. Now cover the pan for 10 mins. Let it rest for about 10 minutes. Do not open the lid in between.

    After 10 mins open the lid and knead the rice flour with the help of hot water (if more is needed) and knead it into a soft and smooth dough, as shown in the image below. Now both your rice flour coating and stuffing are ready.

    Now let's prepare the modaks. First grease the modak moulds with some ghee. Now take a small portion of the rice-flour dough, and make it into oval shape so that it becomes easy for you to fill the dough into the modak mould. Gently press it inside and spread it evenly inside the mould. Now make a small hollow inside it. (Refer to the image below).

    Now take a small ball of coconut-jaggery stuffing and fill it inside the hollow part by gently pressing it. Now seal the hole with some more dough. Now gently open the modak mould. You will get a beautiful shape of traditional ukadiche modak.

    Repeat the same process with the rest of the dough & stuffing. Remember, each time after taking the dough portion, cover it with a damp cloth. And even after making each modaks, cover it too woth a wet cloth or else the madaks would start drying & hence get cracks over them. I am making 5 at a time.

    Now if you have a steamer, grease the steamer base with some oil and place the modaks over it ; now steam the modaks for about 12 to 15 mins. But I don't have a steamer so I'mein using a large vessel with little water in it, then place a plate or a vessel which have holes in its base. Now grease its base with some ghee. Now cover the vessel and let the water come to a boil. Once the water comes to a boil, lower the flame and gently place the modaks over it and cover it.

    Quickly cover the vessel again and let it steam for about 12 to 15 mins. After 12 mins. remove them and apply some Kesar water over them which we had prepared in step 1. Repeat the same steaming process with the rest of the modaks.

    Now pour some fresh ghee over each modaks. Your traditional Ukadiche Modaks are now ready to Serve.
