Ingredients

Makes about 70 dumplings
  • 1.1 lbstapioca starch (500 grams)
  • 2 teaspoonsvegetable oil (10 ml)
  • 3 cupswater (700 ml)
  • 10.5 ozpork belly (300 grams)
  • 14 ozpeeled shrimp (400 grams)
  • Seasonings: annatto oil, fish sauce, salt, black pepper, oyster sauce, sugar
  • Green onions
  • Garlic
  • 1.1 lbsbanana leaves (500 grams)

  1. 1

    Prepare the filling:
    - Slice the shrimp in half lengthwise. Cut the pork belly into thin strips about 3-4 inches long.
    - Marinate the shrimp and pork with minced green onion, garlic, and a pinch of seasoning for 20 minutes.
    - Heat annatto seeds in oil to extract the color, then remove the seeds.
    - Add the white part of the green onions and sauté until fragrant.
    - Add the shrimp and cook for 15 minutes, then add the pork belly and other seasonings (adjust to taste). Simmer for another 15 minutes until the shrimp and pork absorb the flavors and turn a golden brown. Remove from heat and let cool.

    Prepare the banana leaves:
    - Wash the banana leaves to remove any dirt, then blanch in boiling water for about 2 minutes. Transfer to cold water to soften the leaves and make them easier to fold.
    - Pat the leaves dry, then cut into about 70 small pieces, each about 4 x 6 inches (10 x 15 cm).
    - Tear a few strips of leaf to use as ties for wrapping.

    Make the dough:
    - Use 1.1 lbs tapioca starch (500 grams) with 3 cups water (700 ml).
    - Mix the starch with water, 1 teaspoon salt, 1 teaspoon sugar, and 2 teaspoons oil (10 ml) until smooth.
    - Set aside 1/3 cup (100 ml) of the mixture.
    - Cook the remaining mixture over low heat, stirring constantly until it thickens and becomes slightly heavy (about 5 minutes). Remove from heat.

    While still on the stove, continue stirring until the dough is smooth and elastic. Gradually add the reserved 1/3 cup (100 ml) of the mixture, stirring until the dough is soft, smooth, and no longer lumpy.
    - Lay out a banana leaf, lightly brush with oil, spread a layer of dough on the leaf, add some shrimp and pork filling, then wrap and tie the dumpling.

    Steam the dumplings. Prepare a steamer, arrange the wrapped dumplings inside, add water, and steam for 15-20 minutes.
    After 15 minutes, check one dumpling. If it turns translucent and tastes sweet and tender, it's done.

    Once cooked, arrange the dumplings on a plate and serve with a bowl of sweet and tangy fish sauce.
    They taste best when freshly steamed, still soft, chewy, and warm!
