Green Moong Curry

Dry roast coconut and keep aside. Heat oil in a pan. Fry onion, tomato, ginger, and garlic in oil.

Make a puree of all. Heat oil in a pan. Add jeera, curry leaves, onion, and tomato. Saute well. Pressure cook sprouted green moong with one whistle.

Add puree and mix until it releases oil. Add all masalas and salt as per taste. Add cooked moong and add hot water as required. Let it boil for 5 minutes.

Garnish with coriander. Serve hot with roti, chapati, or bhakri.
