Orange Marmalade, easy recipe

Happy New Year everyone! The first recipe in the year of 2023!!
Good to make a jar of orange marmalade this time. Seville orange, blood orange and plane orange, whatever you have. Even only one orange left? fine!! Just make it for your breakfast or lunch. OR,,, a present for your friend.
This is the most improved and easiest marmalade recipe ever, I think.

This is the most improved and easiest marmalade recipe ever, I think.

I had an orange and a blood orange here. I decided to make Jars of orange. Cut the oranges and lemon and discard any pips and edge of fruits. Separate the skin and fruits and shred the skins.. Or cut in1/4 and shred them. (see pic, I took it last time) You can't omit the lemon which has lots of pectin. Add more lemon, more harder the marmalade.

All the fruits and water in a deep pan bring to the boil, and then reduce the heat to middle. Simmer for one hour or until soft. Stir occasionally.

Weigh the stew of orange/lemon in a different pan or container. It was totally 793g this time. It's depending on how long you simmer the stew. Place back 40% of the sugar of total weight (317g, I love bitter ones, but if you like sweet ones, 50~60% would be fine) to the pan, and add some liquid from the stew. (60~100g, I did)

Bring to the boil and bubble for a couple of minutes (I did 5 minutes)
Keep the strong heat for 20 minutes. remove from the heat and wait a couple minutes. When you see some wrinkles on the surface, it's done.
If it's still runny, heat up for further 5 minutes until your wished hardness. Be very careful during simmering on the high heat, the volcano acts would be occurred! - 5
Cool them a bit, spoon the jam into each jar.
You don't need to wait for a long time for eating, actually.
So if you eat it straight away, you don't need sterilising the jars. If you give it as a present, maybe it's good to sterilise the jars before spooning. Please keep the jars in the fridge, because the low percentage of the sugar.
You can use this method for the other citrus fruit. I love a grapefruits.
