Preheat the oven to 175°C.

Line a baking pan with foil and grease with cooking spray.

For the Shortbread:
Mix the Flour and Icing Sugar. Rub the Margarine into the flour mixture, until the dough comes together. It is a very soft dough. - 4
Press the dough into the prepared baking pan, and bake for 20 minutes until golden brown.

For the Caramel:
Melt the Margarine in the Microwave. - 6
Stir in the Golden Syrup and Condensed Milk. Microwave for 8-9 minutes on high, stirring every 1-2 minutes.

Stir in the Vanilla Essence and spread over warm shortbread.

Refrigerate for 2 hours until firm.

For the Chocolate Topping:
Melt the chocolate in the microwave, in 30 second intervals, removing the stirring thoroughly at each interval. - 10
Stir in the Flavourless Oil. Spread over the Caramel.

Refrigerate for 15 minutes until Chocolate is set. Cut out pieces.
