A pizza toppings on tortilla base, later bake in oven and serve hot.when I was a kid, I saw my mum cooking & creating new recipes in a kitchen for family, one day I was so inspired and created my own childish recipe, there where mistakes made but my mum found it, later she explained to me, what were my mistakes where, she was my greatest teacher, she have me every knowledge of cooking not even a cooking school came me.i am always thankful of my late mum and my family for supporting me.

Mix plain flour, salt 🧂 and oil together, add warm water gradually and make a smooth and elastic dough, cover with a moist cloth and keep aside for 30 mins, divide the dough into 7 equal parts.

Roll out each part using a little dry flour if needed into a big thin chappati, heat a griddle, place the rolled tortilla on the griddle, cook lightly on one side for about a min and then turn. Reduce the heat and cook the other side also for 15 -20 seconds till light brown specs appears, remove from heat, keep warm tortillas wrapped in a cloth napkin to keep them soft, use as required.

To prepare sauce: add tomatoes 🍅 in hot water for 4 mins. Remove from water, let it cool completely, peel and puree in a mixer, heat oil/ butter add finely chopped garlic 🧄 cook for a min. Add pureed tomatoes 🍅, tomato sauce, mix well. Add oregano, salt 🧂, and red chillies flakes 🌶️ cook for 5 mins, stirring occasionally till slightly thick, (don't over cook for long time), remove from flame, add finely chopped basil and add black pepper powder mix, keep aside.

In a bowl mix very finely chopped grated cottage cheese, very finely grated mozzarella cheese 🧀, salt 🧂, red chillies flakes 🌶️ and black pepper powder mix well, keep in the fridge till serving time.

Heat oil, add cumin seeds, when start to crackle, add sliced onions 🧅, saute for 2 min,add finely chopped 🍅 tomatoes, tomato paste mix well, add chopped green chillies, salt 🧂, kashmiri red chillies powder 🌶️ mix well, cook for 1 min, add chopped green capsicum 🫑 mix well, cook for 2 mins and remove from flame.

Preheat the oven at 180°c, cover a wire rack of the oven with foil, spread 1 tsp of oil the foil, grease well, spoon tomato sauce 🍅 over each tortilla base leaving 1/2 " edges all around, brush the edges with vegetable oil (olive oil).

Add capsicum 🫑 mixture and spread it well, on top add cottage cheese mixture and spread, cover completely as you do for pizza. Complete all tortilla base same way Bake in the oven for 18- 20 mins until the edges start turning golden and crisp and serve.
