Ingredients

9 min microwave, 30 min bake
1 person, 10 potato cookies
  • 1 poundyukon or other yellow potatoes, probably 4 potatoes, skin on
  • 1 Tbsmilk
  • Pinchnutmeg
  • Pinchsalt
  • Mist of olive oil
  • 1fresh farm egg yoke
  • Equipment: pressing form (antique store or amazon), food processor, microwave
  • Cost: potatoes 50 cents,egg yoke 40 cents, olive oil, milk 10 cents, $1 per person

Steps

9 min microwave, 30 min bake
  1. 1

    Scrub potatoes, slice skin every inch, microwave 6 minutes one side, 3 minutes other side. Crumble, put in food processor with salt, nutmeg, milk, egg yolk, pulse till creamy. Cool. Press potato mash out into cookie forms.

    Put on ovenproof plate, mist potato cookie tops with olive oil. Bake in preheated 400F degree oven till gold crust develops, about thirty minutes. Delicious hot or cold. Serve.
