4 child-sized servings
  • 2small potatoes
  • 1small zucchini
  • 1small carrot
  • 1tomato
  • 2large eggs
  • 1.5 ozfeta cheese (about 40 grams)

Steps

30 minutes
  1. 1

    Boil the potatoes until tender, then drain the water. Mash them with a fork and place them in a nonstick skillet.

  2. 2

    Blend the tomato, carrot, and zucchini in a blender until smooth.

  3. 3

    Add the blended vegetables, beaten eggs, and crumbled feta to the skillet. Cook over low heat.

  4. 4

    Stir as it cooks.
