Wash and pat dry the bhindi well. chop them into 1 cm size and stir fry in oil for 5-6 minutes till it’s half cooked. Take it out and Keep it aside.

Add finely chopped onion in the same oil and sauté till golden brown.

Add the half-cooked bhindi on top of the onions and add salt and turmeric powder.

Cover and cook for 5-6 more minutes till the onions also start to caramelize.

Mix the bhindi with the onions and add coriander powder, red chili powder, and dry mango powder, and mix well.

Serve the bhindi with roti and dal for lunch or dinner.
