Mini Halloween Quesadillas in the Air Fryer for Lunchboxes

I had some leftover masa from stuffed chilaquiles, so I decided to use it to make these mini quesadillas for the girls' lunchboxes. I also made them in the air fryer and then used an edible marker to draw faces on them. They turned out cute and delicious!

I had some leftover masa from stuffed chilaquiles, so I decided to use it to make these mini quesadillas for the girls' lunchboxes. I also made them in the air fryer and then used an edible marker to draw faces on them. They turned out cute and delicious!
Cooking Instructions

Using a tortilla press and two Ziploc bags, flatten a ball of masa. Repeat with another ball and place mozzarella cheese in the center.

Carefully cover with the other tortilla and cut into a pumpkin shape.

Use one of the bags to help seal the edges well.
- 4
Spray with nonstick cooking spray and cook in the air fryer at 400°F (200°C) for about 5 minutes total, flipping halfway through.
