Take sooji in a bowl. Add water. Let it rest for 10 minutes.

Once the sooji starts rising, it is ready to get cooked.

In a kadhai, heat desi and add sugar.

Keep stirring till the sugar gets caramelized and starts dissolving.

Once the sugar caramelizes and gives out a caramel aroma, carefully add soaked sooji. This is a very important step. Pour the sooji carefully and do not stop stirring or you will end up getting lumps of sugar.

Keep stirring. You will need to put some pressure to break any sugar lumps formed. At this point, add more desi ghee so that stirring becomes easy and you get a nice shine. If you want to add green cardamom powder, add it now.

Stir till the halwa turns golden brown. Turn off the flame and keep the vessel in a tilted position for 5 minutes till all the extra ghee leaves the sides. Remove the extra ghee.

Garnish with pistachios or nuts of your choice. Serve hot.
