Slow cooked peppers with sausage, a great combination to accompany with rice or pasta or eat by itself. Hope you try it.
Steps

Wash all your veggies well and cut them roughly. Add olive oil and salt to a pan and start cooking slowly all veggies. One each time. Add first the onions, then peppers and keep stirring until they become soft. Close lid for 5 min to increase moisture and they can become softer.

In a different pan add olive oil and cook zucchinis and eggplant. After 15 min add the zucchini and eggplant to the other pan with veggies and stir them all together. Turn oven on 190 on fan.

In the same empty now pan, cut and add sausage and cook on both sides until done.

In the veggie pan add can of tomatoes and tomato paste and mix well, cook for a few minutes. After 10 min add sausage and mix well. Add 100 ml boiling water and stir. Add sugar and mix well.

After 15 min everything is well combined and should look like this. Place all cooked ingredients in an oven dish and add feta cheese and grated cheese of choice on top.

Place in oven for 30 min and then enjoy!
