Whole Wheat & Oats Biscuits

These biscuits are made with whole wheat flour and wheat oats and sweetened with jaggery. They are crispy, crunchy, and crumbly with an earthy sweetness and nutty taste. They were first introduced in Scotland named as "Digestive" because, as the name suggests, it's aim was to cure some digestion issues into patients. These biscuits are equally famous in England, America and in India & Pakistan.

Americans call it "Graham Crackers". In Pakistan we have local biscuits with same ingredients, "Wheatable".

And here I present to you my version with a hint of wheat oats and jaggery.

Ingredients

prep time: 15 mins| bake time: 7-8 mins
28 small size
  • 3/4 cupwhole wheat flour (regular atta)
  • 3/4 cuprolled wheat oats (grind to fine powder)
  • 1/2 cupfine jaggery powder
  • 1/4 tspbaking soda
  • 1/4 tspsalt
  • 4 tbspunsalted butter (softened)
  • 3 tbspcold milk (can be more or less)

Steps

prep time: 15 mins| bake time: 7-8 mins

    In a big mixing bowl add the sifted wheat flour, powdered oats and jaggery.

    Add the baking soda, salt and butter and mix well. Add milk and make a dough.

    Spread it on a cling wrap, make a ball and then flatten into a thick sheet.

    Prick with a fork and cut the shape. Lay them on a lined baking tray and chill for 6-7 mins before baking.

    Now bake in preheated oven for 7-8 mins at 190 degree C. Remove from oven and let rest for 10 mins on a cooling rack.
