I just used what I had in my fridge. But it turned out to be very nice. It’s a mushroom season, you can add any mushrooms you like! For the seasoning, the key is to add so sauce and mayonnaise!

Defrost frozen leftover rice in a microwave.

Heat some oil in a pan, cook garlic cloves until fragrant. Add sliced shiitake mushrooms.

Crack eggs, mix it and pour in the pan.

Before the egg is set, add the rice and cook under medium to high heat. Mix the rice quickly without pressing the rice.

Add mayonnaise, soy sauce, chicken stock powder and sprinkle salt and pepper. Serve in a plate.
