For marination: take a plate and add fish pieces 🐠, Chaat masala, turmeric powder, kashmiri red chillies powder 🌶️, ginger garlic paste 🧄, lemon juice 🍋 and mix well, marinate for 30 mins. Heat oil and deep / shallow fry the marinade fish pieces 🐠 till golden, remove and drain excess oil, add on kitchen napkin and keep aside.

For boiling rice: Boil water 💦 with star anise, cloves, oil, white vinegar and black pepper corns for 5 mins, add soaked rice 🍚 and boil the rice till 60% done. Keep aside

For gravy: heat sunflower oil 🌻, add bay leaves 🍂, cumin seeds, small cardamom saute for 1 min, add ginger garlic paste 🧄, tomato & coriander leaves puree 🌿🍅 and mix well, add spices: cumin powder, kashmiri red chillies powder 🌶️, turmeric powder and mix well, add crushed fried onions 🧅, 1/4 cup water 💦 and mix well, let it boil for 2 mins, add fried fish pieces 🐠 and cook for 4 mins, remove from heat and keep aside.

Assemble for rice: in a big saucepan add 1 tbsp ghee, add one layer of rice, add fish mixture, add remaining rice, orange food colour, coriander leaves 🌿, 1 tbsp ghee, fried onions 🧅, cover and cook for 15- 20 mins or rice is done and serve hot. Garnish with lemon wedges.

Note: I have used Nile perch pieces 🐠 in my recipe, if you desired use king fish or the fish of your choice.
