Ingredients

  1. For Marination:
  2. 250 gmsZorabian Spicy Chicken Sausages
  3. 1/2 tspSalt
  4. 1/2 tspBlack Pepper Powder
  5. 1 tspSoy Sauce
  6. 1 tspGinger Garlic Paste
  7. 1 tbspCornflour/Arrowroot
  8. 1-2 tbspOil (For frying the marinated chicken sausages)
  9. 1 tbspWater
  10. For Boiling the Noodles:
  11. 150 gmsJapanese Egg Noodles (Half Packet)
  12. 1 tbspSalt
  13. 1 tbspOil
  14. 2 LitresWater
  15. 1 1/2 tbspOil (For spraying over the cooked noodles)
  16. For Making the Noodles:
  17. 2-3 tbspOil
  18. 2 tspGarlic (Chopped)
  19. 1Onion (Sliced)
  20. 1Carrot (Thinly Sliced)
  21. HalfGreen Bell Pepper (Chopped)
  22. 1/2 cupCabbage (Finely Chopped)
  23. 3-4Green Chillies (Finely Chopped)
  24. 2-3Green Onions (Finely Chopped)
  25. 2 tspSoy Sauce
  26. 2 tbspRed Chilli Sauce
  27. 1 tbspChilli Vinegar
  28. 1 tspBlack Pepper Powder
  29. 1/2 tspSalt
  30. For the Egg Scramble:
  31. 1 tbspOil
  32. 4Eggs
  33. as requiredSalt to Taste
  34. 1/4 tspBlack Pepper Powder
  35. 1/4 tspMexican Seasoning

Steps

    Firstly, chop the chicken sausages into small bite size pieces and transfer it to a mixing bowl. To it, add salt, black pepper powder, soy sauce, ginger garlic paste and cornflour or arrowroot. Mix it well. Set it aside to marinate for 10-15 minutes. (You can use chicken instead of chicken sausage)

    Now for boiling the Noodles, add water to a large cooking pot. Add salt and oil and mix it. Set the flame to high and let the water come to a boil. When the water is boiling, carefully slide in the noodles. Do not break the noodles.

    Cook the noodles on medium flame for about 7 to 8 minutes till it is 90-95% Done. Drain the water from the noodles and rinse it in running water so that the starch will be removed and the noodles will not stick to each other. Drain it completely. Keep it aside for 3-4 minutes.

    Spray oil and mix it well. Set it aside.

    Heat 1-2 tablespoon oil in a pan. Add the marinated chicken sausages and cook on medium flame for 2-3 minutes. Add a tablespoon of water and further cook for 3-4 minutes or till done. Remove from pan and set it aside.

    In a small bowl, break the eggs. Add salt, black pepper powder and mexican seasoning and whisk it well.

    Heat one tablespoon oil in a pan. Add the beaten egg and fry it well till done. Set it aside.

    Now to keep the sauce ready, in a small bowl add soy sauce, red chilli sauce and chilli vinegar.

    Also add black pepper powder and salt and mix it well. Set it aside.

    Clean and chop the cabbage, green bell pepper, green onions and carrot. Set it aside.

    Now to begin with the making of the Noodles: Heat oil in a large wok/kadai. Add the chopped garlic and saute slightly. Next add the sliced onions and saute on medium flame until slightly soft.

    Add the chopped green chillies and saute till the onions are slightly brown.

    Now add the chopped vegetables ie. cabbage, green bell pepper, carrot and green onions and saute on high flame for 2-3 minutes. Do not saute for long. The veggies need to be crunchy. Then add the fried chicken sausages and the scrambled egg.

    Mix it well. Add the cooked noodles and mix it well.

    Now add the prepared sauce and mix it gently. Saute it on high flame for 2-3 minutes until well combined.

    Garnish with the chopped greens of green onions. Mix it well.
