Prepare all the ingredients for the soya pea pulao. Rinse the basmati rice and soya chunks separately, then soak each in water for 20 minutes. Chop the onion, tomato, potato, and green chili. Make the ginger paste.

Sauté the soya chunks in 1 teaspoon oil, then set aside on a plate. Heat a pressure cooker and add the ghee. Once the ghee is hot, add all the whole spices listed and sauté for a few seconds, then add the ginger paste and onion.

Add the potato, green peas, tomato, and drained rice.

Add the turmeric powder, garam masala, red chili powder, salt, and the sautéed soya chunks. Sauté for 1 to 1 1/2 minutes, then add water as needed.

Cook on medium heat until the pressure cooker gives one whistle, then turn off the heat. Let the pressure release naturally, then open the lid.

Fluff the hot, cooked soya pea pulao. Sprinkle cilantro leaves on top.

Serve the hot soya pea pulao on a serving plate. You can enjoy it with raita or chutney, or eat it as is.
