Cut the courgettes into noodles. Mix them with the salt and leave them in a colander in the sink for about 20 minutes to drain any excess moisture. You can julienne by either using a knife, a mandoline, a shredder/peeler or a Chinese slicer.

Warm the coconut oil in a large frying pan and add the courgettes. Saute them for a few minutes until they are just cooked, then add them to whatever you like.

Note: You could use these noodles as a substitute for any pasta with any pasta sauce, in any Asian broth, or a stir-fry, or on their own as a light side with some grilled chicken or fish.
