Patacones with Cheese 🇪🇨

Patacones are basically green plantains that are fried in two stages. They are known by different names in various countries, but in Ecuador, they are called patacones because they resemble the coins from colonial times that had this name, derived from Arabic. Patacones can be served as an appetizer or as a side dish for more elaborate meals. Personally, I really enjoy them for breakfast.

Gather all the ingredients you will need for this recipe.

Peel the plantains and cut them into slices about 1 1/4 inches (3 cm) thick.

Fry the plantain slices in a skillet with hot oil until golden brown.

Once golden, remove them from the skillet and flatten them.

After flattening, return the patacones to the hot oil and fry for another 2 minutes. Transfer them to a plate lined with paper towels and sprinkle with salt to taste.

Cut the cheese and add it to the patacones.

Place the patacones with cheese in the microwave for 30 seconds to melt the cheese.
