Start by preheating the oven to 180 degrees for 10 minutes.
Next in a grinding jar, take a cup of granulated sugar, and add cardamoms and salt. Grind.
Now take a cup of powdered sugar in a mixing bowl.
Cream sugar powder and ghee till it's white and fluffy.
Next sieve down, atta, besan, sooji, baking powder, and baking soda. - 2
Using a spatula mix gently to bring the ingredients together into a crude dough.
Don't overwork the dough. - 3
Now take small portions from the dough and make spheres.
Place it giving ample space on a greased baking tray.
Now place it for baking.
Bake at 180 degrees for 4 minutes. Next again bake for 1 minute.
Switch off and let it be in the oven for some time. Take it out and let the nankhatai come to room temperature, then only remove it from the baking tray. - 4
It's ready!!
You can garnish it with pista, cardamom seeds, or cashews before baking. - 5
