This dessert is very simple and quick to make. You can change it up with all kinds of syrups, and it will always be a different treat. I make it lighter by replacing half the heavy cream with milk, and it still turns out great.

Make the coffee syrup: Brew the coffee. Mix it with the sugar and cornstarch. Heat in the microwave for 20 seconds, then let cool.

Soak the gelatin sheets in water for 10 minutes.

Heat the heavy cream and milk with the sugar. As soon as it starts to boil, add the squeezed gelatin. Stir and remove from heat.

Pour into molds and let cool to room temperature.

Refrigerate for a few hours or freeze. If frozen, remove from the freezer 4 hours before serving and invert onto a plate. Before serving, drizzle with the coffee syrup.
