Bacon wrapped smoked Turkey

Wash Turkey inside and out

Brine Turkey: mix salt, 1 teaspoon minced garlic, 2 teaspoons rosemary, and 1/4 teaspoon pepper with water in large pot. Soak completely covered Turkey for 24 hours

Rinse and pat dry turkey

Butter spread: soften butter and mix in minced garlic, pinch of salt, 1/4 teaspoon pepper. Apply butter over the entire turkey to include inside.

Preheat smoker to 275 (I like to use apple pellets)

Apply bacon: using a basket weave method apply bacon to Turkey

Cut apples, onions, rosemary sprigs and insert with Sage leaves into the cavity of the turkey

Smoke Turkey uncovered for 30 minutes per pound
