Ingredients

  1. 2boneless-skinless chicken breasts
  2. 1pineapple; large dice
  3. 1green bell pepper; large dice
  4. 1red bell pepper; large dice
  5. 1yellow onion; large dice
  6. 1/2 Cponzu (lime soy sauce)
  7. 1/4 Csesame oil
  8. 2 clovesgarlic; peeled and smashed
  9. 1 Tcrushed pepper flakes
  10. as neededkosher salt

Steps

  1. 1

    Whisk together ponzu and sesame oil. Add smashed garlic cloves.

  2. 2

    Marinate chicken, peppers, and onions in soy sauce mixture overnight.

  3. 3

    Drain and discard marinade.

  4. 4

    Drizzle enough vegetable oil to coat chicken and vegetables. Add salt and crushed pepper flakes.

  5. 5

    Roast at 400° for approximately 25 minutes or until chicken reaches 165°

  6. 6
