Dry roast jeera & coriander seeds on very low flame 🔥 it should be little warm not roast too much ; grind it in fine powder add salt chili powder & oregano & blend once if you have *Mexican spices* put 2 tsp when you add salt chili & oregano @ blending time

Heat oil in a pan; add chopped garlic onion & sauté well
Add the the veggie { no tomato } sauté well ; add kidney beans sauté 2 min ; keep all veggies crunchy
Add tomato purée & Mexican Masala according your taste I put 2-1/2 tbsp - 3
All cooked rice & mix everything nicely; add tomatoes coriander & check the seasoning
Garnish with some salta on top, crushed Doritos/ Nachos & grated cheese on top { optional }
Serve hot
