Cooking Instructions

1) In a pot, add the ghee, once heated fry the cashew nuts and raisins till the cashews are golden in color and raisins swells up. Take out the cashew & raisins* and keep it aside and add at the end of the cooking.
Add the cardamom** pods (crush it a bit so that it opens up otherwise once you add it in the ghee it will crack open and may act as a splinter 😜😀 and may be out of the pot).
Note : *Sometimes I don't take it out to avoid washing an extra plate 😆. - 2
* If using cardamom powder add while the Halwa is in the Cooking process.
2) Add the grated carrot, saute it till the sugar of the carrot starts caramelizing.
3) Add milk and let it come to boil and cook on slow flame, stirring in between. - 3
4) Once the moisture has reduced by 90% add the jaggery powder (grate the jaggery or break it into small pieces so that it dissolves easily).
5. Now keep stirring & cook till the ghee starts oozing out of the Halwa. Add in the nuts & raisins too. Serve Warm !
