First wash the all vegetables and spinach and cut into small pieces and keep aside.

Heat mustard oil in a kadai, fry lentils dumplings and brinjal pieces and keep aside.

Same kadai add bay leaves,panch phoran, red green chillies and saute few seconds then add all vegetables and mix it well and cook some times. Now add turmeric powder,salt and mix, cover and cook on low flame.

When half cooked the vegetables add spinach and mix it again cover and cook on low flame.

Now open the cover add fried brinjal, dal dumplings and sugar and mix it properly well and cook till all water evaporate and becomes dry.

Winter special vegetables Palong Shaak Ghonto is ready. It's best goes to steam rice. Serve it with hot rice.
