बथुआ का रायता (Bathua ka rayta recipe in Hindi)

Whisk the yogurt in a bowl until smooth. Add 1 tablespoon of ground bathua leaves.

Mix in the bathua, then add all the dry spices and both types of salt. Stir everything together.

Heat ghee in a pan and add the mustard seeds until they start to pop. Add a pinch of asafoetida (hing), then pour this tempering over the raita.
