Peel, cut and wash Irish potatoes add into a pot add some water and a sprinkle of salt. Cook for 15-20 minutes until soft and tender. Strain water away and set aside. I cook my potatoes together with the eggs.

Peel the cooked eggs, add into a bowl and mash using a fork as seen in the picture 👆 above. Then add in the cooked potatoes, tomato, red bell pepper, onion, seasoning cubes, mayonnaise and salad cream.

Mix every thing together and serve! I paired mine with jollof rice. You can serve with any thing you like enjoy!🤤😋😋
