Wash the paalak and chop it finely and keep it in a strainer. Cut the potato and keep in water. Heat oil in a kadai,add chopped ginger garlic and green chillies fry for a few mins till aromatic. Then add 1 sliced onion and fry till translucent.

Then add the potato and paalak. Mix it, keep the flame on high when it settles down add haldi powder,salt and the remaining sliced onion mix, cover and cook on medium flame till the potatoes are cooked well and the water dries. Serve it with bread,phulkas, pooris or rice.
