Mint chicken masala

Make a paste of mint leaves, lemon juice, a little amount of salt, 4-5 cloves of garlic and 2 green chillies.

Wash the chicken pieces thoroughly and add plain yogurt, salt as per taste, 1 tsp of ginger garlic paste, 1/2 tsp of turmeric powder, 1/2 tsp of kashmiri red chilli powder,1 tbsp of mustard oil, previously made mint paste. Mix well and keep the marinade chicken for 30 minutes.

Now heat a nonstick kadhai and add 3 tbsp of mustard oil. Add 1 bay leaf, 2 green cardamoms, 1/2 inch cinnamon stick, add sliced onions. Saute until onions turn into golden brown. Now add rest 2 tsp of ginger garlic paste, saute for 3-4 minutes over medium flame.

Now add chopped tomato, salt as per taste, 1/2 tsp of turmeric powder, 1/2 tsp of kashmiri red chilli powder, 1 tsp of coriander powder, 1/2 tsp of cumin powder. Mix well and sautee until oil separates from masala.

Now add marinade chicken to the masala. Mix well. Cook for 25-30 minutes over low to medium flame.

Now add just 1 cup of warm water and bring it to boil. Make athe gravy you want. Add 1/2 tsp of garam masala and mix well.

Now switch off the gas stove. Add 1/2 tsp of ghee and chopped coriander leaves and mix well. Cover it for 2 minutes.

Now mint chicken masala is ready so transfer to a serving bowl and serve along with chapati, Paratha or steamed rice as you want.
