Kashmiri chai /Pink tea

Kashmiri chai is a milk tea characterised by its dusty pink colour and garnishing of crushed nuts. It's brewed with green tea leaves and baking soda and then mixed with milk to give it a distinct pink colour. It' has salt also, actual kasmiri chai is saltish and called noontea.
In Pakistan, this chai is a bit of delicacy, often served at winter weddings.
Although it's a long process of making in traditional way, first a deep pinkish qehwa is prepared by boiling and reducing the tea and then shock it with qehwa with chilled water and have to aerate (phetna) before adding with milk.
It's really a treat to make and enjoy cold nights with family.

Chop nuts and keep aside

Boil water add sabut garam masalay and cook for 5 mins than add chai ki patti and let it boil for 10_15 mins

Add baking Soda and boil till water reduced to half, it will change colour after adding Soda.

If colour does not come add some more soda and keep stirring.

Now add iced chilled water half in the pan and mix with a ladle /dongi and let it cook, again add remaining iced water and cook for few mins till colour changes to pink purplish. Take out and strain in a glass container. This mixture can be stored in fridge for 5_7 days.

Heat milk add sugar and chopped nuts, continue stirring with ladle till milk is foamy, then add the chai mixture prepared. Add as much you need. 2cups or more. When adding in milk chai turns into beautiful pink colour.

Serve hot with chopped pista badam and enjoy this flavorful beautiful chai in cold weather.
