Kaddu and Turai with Methi Sabzi

This is yet another simple combination dish made in my home sweet home with Bottle Gourd or Kaddu, Ridge Gourd or Turai and Fenugreek Greens or Methi. Not only it is absolutely delicious but also gives that amazing crunch to the dish.
It goes very well with any Indian Bread for Breakfast. Or even for Lunch or Dinner too.
It also can be relished with a steaming hot plate of simple boiled Rice alongside any other Curry or as it is too. It tastes super yummy.
And it's done with just a few spices and vegetables. That's it.
It looks so good as well. Simple yet filling and comfort food, by all means, it tops the menu in my house for Breakfast mostly.
Try it out for yourselves and do share your feedback if possible. And as Winter is in full swing, how can I resist myself from making this beautiful Sabzi or Sabji. It's a lovely fusion meal that can be enjoyed to the fullest especially in this Season when fresh Vegetables are easily available and are in abundance. I pack this for Lunchbox too. Both these Vegetables go very well with each other and Fenugreek Greens are like Sone pe Suhaga. It's absolutely delicious. A must have combination dish for sure.

In a pan, heat some Oil and add the Ginger Garlic Chilli paste. Saute it for a few seconds and then add in the Asafoetida. Now stir in the chopped Onions and Fenugreek Greens. Saute on a low heat until crisp and done. Add in the powdered spices too. Followed by the cubed Bottle Gourd and Ridge Gourd both. Mix well and cook on a low heat with a lid on. Also add slit Green Chillies as desired.

Cook until done for a few minutes or so. Do not overcook it. As it is, it will be almost done in about 18 to 20 minutes. Do not add water to it. Also add in more of the chopped Fenugreek Greens or Methi.

Garnish with freshly chopped Coriander Leaves and serve hot. It goes very well with Rotis for Breakfast and also steamed Rice. Serve hot as a delicious side dish to many an important meals. Yum! Enjoy!
