Omelet with Rice, Emmental, and Parsley

Melt the butter in a large skillet.

Add the rice to the skillet.

Reduce to medium-low heat and sauté the rice. Meanwhile, crack the eggs into a mixing bowl.

Beat the eggs and add the parsley.

Add the sour cream, mix, season with salt and pepper, and mix again.

Add the cheese and mix.

Pour the contents of the bowl into the skillet, increase to medium heat, and let the omelet set.

Flip the omelet to cook the other side, then slide the omelet onto a serving dish.

Sprinkle with chopped parsley. It's ready!
