Ingredients

15 to 20 min
2 to 4 servings
  1. 14 ozcanned black beans with liquid, warmed in microwave 2 min
  2. 3/4 cupfrozen mixed vegetables (peas corn carrots green beans)
  3. Fresh, raw kernels of 1 ear of corn
  4. 1 cupgrated cotija cheese or to taste
  5. 8 ozsalsa casera or pico de gallo
  6. 1/4 cupcrema oaxaqueña or sour cream for garnish
  7. 2tsps parmesan cheese, chili powder to taste, pinch of sugar

Cooking Instructions

15 to 20 min
  1. 1

    In a medium bowl, mix warmed black beans with all ingredients except cream

  2. 2

    Transfer to a shallow serving dish. Top with cream in the center or on individual portions & serve as a side dish or a snack.
