14 ozcanned black beans with liquid, warmed in microwave 2 min
3/4 cupfrozen mixed vegetables (peas corn carrots green beans)
Fresh, raw kernels of 1 ear of corn
1 cupgrated cotija cheese or to taste
8 ozsalsa casera or pico de gallo
1/4 cupcrema oaxaqueña or sour cream for garnish
2tsps parmesan cheese, chili powder to taste, pinch of sugar

In a medium bowl, mix warmed black beans with all ingredients except cream

Transfer to a shallow serving dish. Top with cream in the center or on individual portions & serve as a side dish or a snack.
