Egg and cheese spaghetti

The original recipe is called "Spaghetti del poverello” (poor man's spaghetti) in Italy. It's a recipe that can be cooked with common ingredients at Italian homes; eggs, cheese, garlic and spaghetti. A YouTuber's video cooking the pasta with some arrangements inspired me because the recipe is meant to serve the spaghetti to restaurant staff. Likewise, I wanted to cook pasta to serve a few people in the office for lunch. He uses a Japanese-Chinese condiment called "味覇" for sauce, but I use typical Chinese chicken powder in an Asian supermarket in the UK.

Ingredients

30-40 mins

  • 200 gspaghetti
  • 2-3 clovesmedium garlic (more garlic is better)
  • 4eggs (2 for sauce and the rest for topping fried eggs)
  • Grated hard cheese (parmesan, parmigiano reggiano, or pecorino romano)
  • 1.5 tspChinese Chicken powder (optional)
  • 150 mlhot water
  • 2 tbspor more extra virgin olive oil
  • Salt - Maldon sea salt flakes if you have
  • Black pepper
  • Fine salt for boiling pasta

    FYI: You would need a pot to boil pasta and two frying pans to cook this recipe efficiently; one for cook sauce and another to make fried eggs. You can cook fried eggs first if you don't have enough pans/hobs.

    The main photo used 400g of spaghetti and 6 eggs to serve 4-5 people, but of course, a smaller portion is easier to cook.

    Make 150ml hot water in a kettle and mix the hot water and chicken powder. This can be done at any time before finishing the sauce but worth noting at first to keep that in mind. Alternatively, I think you can use the same amount of salted pasta water to add taste (I haven't tried that yet).

    Prepare a pot to boil pasta and add regular fine salt for 1.0% of the water. For example, add 10g of salt to 1 litter of water. Heat the pot.

  4. 4

    Heat a fry-pan and add plenty of extra virgin olive oil (2-3tbsp) and another fry-pan with any cooking oil for cooking fried eggs

  5. 5

    Crush or cut in half of the cloves of garlic, peel the skins and remove the garlic germ so that you won't get a burn taste from the germs

  6. 6

    Heat the garlic in the frying pan with extra virgin oil with low heat until the garlic cloves get soft. (You can crush cloves when it's soft)

  7. 7

    Start boiling spaghetti until the given cooking time minus 1 ~ 1.5 mins before

  8. 8

    Start making fried eggs in another pan. Once the egg white is cooked, season the fried eggs with salt and black pepper. Maldon sea salt flakes are suitable for this. Once the bottom of eggs become crispy, leave the frying pan away from heat, or take the fried eggs out from the pan

    While boiling spaghetti, crack 2 eggs into a bowl or somewhere in advance. Grate cheese and keep it in another bowl in the meantime. They will be mixed in the frying pan for sauce, but it's easier for you to do this now.

    Heat the frying pan with high heat, add cracked eggs into the oil and mix them well, just like you make scrambled eggs. Once the eggs are almost cooked, add the hot water with chicken powder and mix them well. Heat it until the sauce boils

  11. 11

    When the spaghetti is almost ready (1-2 mins before cooking time). drain the spaghetti and put it into the frying pan for sauce. Toss the spaghetti in the sauce, and add grated cheese as you toss. Cook the spaghetti for about 1 min until the sauce gets thickened.

    Serving spaghetti with a fried egg on top. Add extra grated cheese and black pepper.
