Ingredients

  • TOSTONES (FRIED PLANTAINS)
  • 3green fresh plantains
  • Oil for deep frying
  • Salt to taste
  • QUESO FRITTO (FRIED CHEESE)
  • 300 gfreír queso (any frying cheese e.g. Costeno)
  • Oil for frying
  • guacamole
  • 3small ripe avocados
  • 1large tomato, chopped
  • Finely chopped onion (as much as preferred)
  • Fresh lemon juice (as much as preferred - always test taste)
  • 1small bunch of cilantro (finely chopped)
  • Salt to taste
  • PICO DE GALLO (TOMATO SALSA)
  • Tomatoes, chopped, cored and with seeds removed
  • White onion, roughly chopped
  • Handfulcilantro, finely chopped
  • Lemon juice
  • Salt to taste

Steps

  1. 1

    In a frying pan heat oil over medium-high heat until shimmering

  2. 2

    Pry open skin to peel PLANTAINS before slicing them into equal sized pieces [atleast 1-inch thick]. Deep fry until softened (you should be able to piece through easily with a fork), but not browned. For this size it should take about 5 minutes per side

  3. 3

    Drain plantains on a paper towel and whilst still warm, flatten each piece with the bottom of a saucer or cup. Fry again until crispy and golden yellow (roughly a minute per side). Drain on paper towels and sprinkle with salt while still hot. Set aside as you prepare the other components

  4. 4

    To prepare the QUESO FRITO, cut cheese into slices of about an inch all around

  5. 5

    Decide whether to deep fry or shallow fry and heat up the required amount of oil over high heat (feel free to use the same oil used for the plantains)

  6. 6

    Fry cheese for 2-3 minutes on each side, with edges slightly browning (do not be tempted to over fry otherwise they will be chewy and tough)

  7. 7

    Drain fried cheese on paper towels are you prepare the toppings

  8. 8

    To make the GUACAMOLE scoop fresh avocado into a bowl, mash into a chunky dip with a fork. Stir in the onions, lemon juice, cilantro, tomato and salt. Refrigerate while you make the salsa

  9. 9

    For the SALSA, combine all required ingredients to preference

  10. 10

    ASSEMBLE snack by placing friend plantains at the bottom, followed by the fried cheese and topped with either guacamole or salsa
