Chinese Chilli Oil

Chilli oil is one of the best condiments to have on hand for any spice lover out there. This hot pepper oil can be drizzled over noodles , rice , dumplings , pasta , curry or even used to cook - the options are endless and gives an addictively amazing spicy aroma and flavor to any dish.

Take a bowl add red chilli flakes, white pepper powder, salt

Add sugar, paprika powder (to look a brighter red) and mix well.

Add 1 tbsp oil and mix well. The purpose of this oil is so when we add the hot oil it won't be as shocking of a temperature change. This is a little water now, and here's a tip to enhance the red colour of the chilli oil.

Take a pan add oil, when it bubbles around something in it. It's hot enough. We are ready to start adding ingredients add ginger slices slightly stir fry on medium heat.

Then add garlic slices, onion slices and fry till golden brown colour.

Add star anise, cinnamon stick and fry it until the onion and ginger turn golden.

Then we are ready to take out the ingredients from the oil. Scoop the solid out and turn the heat down. Make sure to squeeze as much oil as possible.

Heat up the oil again. Now we're ready to pour the oil over our chilli mix. This is the first pour, and we are going slowly. Stir it in.

Add sesame oil, fried star anise to bring out the aromas of all the ingredients and mix well.

Mix well.

Finally, leave the oil to cool down completely then transfer to a sterilized glass jar.

Use it for Chinese gravies or noodles, or momos.
