Easy lunch/dinner option. Not sure if it qualifies as japchae but it's a similar dish.
Steps

Velvet sliced chicken with baking soda if you're using chicken breast

Rinse chicken (if velveting) and marinade with cornstarch, black pepper, soy sauce and oyster sauce

Chop up garlic, onion and all your veggies
- 4
Scramble a few eggs, remove and put to side
- 5
Fry your chicken with some oil. Bits and pieces will get stuck at the bottom on your pan. Don't worry, we want those pieces there. Remove and set aside chicken when done

Cook your glass noodles as per instructions and set aside.

Stir fry onions. When slightly translucent, add garlic.

Add in your carrots and mushroom and capsicum.

When half cooked, add in your leafy vegetables. Add a bit of water if needed but be careful, the veggies yield some water and we don't want a soup. Also, the liquid in your pan should clear the fond.

Add in your noodles.

Add oyster sauce and dark caramel sauce.

Add chicken.

Add eggs.

Garnish with coriander if you want.
