Ingredients

  • 6 1/2 lbstomatoes
  • 5onions
  • 1/2 lbguajillo chiles
  • 2 headsgarlic
  • as neededchicken stock
  • 1 sprigepazote
  • 8 3/4 lbstortillas
  • 4 1/2 lbspanela cheese
  • to taste pork rinds
  • to taste avocado
  • to taste sour cream

Steps

  1. 1

    In a pan, cook the tomatoes with the halved onions, guajillo chiles, and garlic cloves (add salt). Blend everything.

  2. 2

    Bring the chicken stock with 1 halved onion to a boil.

  3. 3

    In a pot, combine the blended mixture and add the chicken stock. Add the epazote, salt, pepper, and chicken bouillon to taste, and let it boil.

  4. 4

    Cut the tortillas into strips and fry them, cut the cheese into cubes, slice the avocado, and break the pork rinds into pieces.

  5. 5

    Serve the soup with tortilla strips, add the cheese, sour cream, avocado, and pork rinds.
