Melt a pat of butter, add the flour, and whisk together.

Gradually add the milk and thicken while stirring constantly. Season with salt and pepper.

Fill the croissants with béchamel sauce, ham, another layer of béchamel, and Gruyère cheese.

Add the remaining béchamel and a bit of Gruyère on top. Bake for 10 minutes at 375°F.
