No need for a long description to convince you to try this recipe... who doesn't love focaccia?! This recipe is super easy, but you'll need a little patience because it requires a few hours to rise.

Pour the water and fresh yeast into a bowl and stir until the yeast is completely dissolved.

Add the flour, salt, and olive oil. Knead until the dough is smooth and uniform.

Place the dough in a bowl and cover with plastic wrap. Let it rest for 2 hours.

After the first rise, transfer the dough to a baking pan lined with parchment paper. Cover with plastic wrap and let it rest for 1 hour.

After the final rise, use your fingertips to press into the surface of the dough to create the classic focaccia dimples.

In a small bowl, mix a little olive oil with some water. Pour this mixture over the dimpled surface of the focaccia. Sprinkle with flaky sea salt and rosemary.

Bake in a preheated convection oven at 400°F (200°C) for 45 minutes.
