Grate the onion, then squeeze out the juice well. Place the onion pulp in a large bowl. Add the ground beef, ghee, parsley, salt, and black pepper. Squeeze the bread well to remove excess water, then add it to the bowl along with the baking powder. Mix everything together thoroughly by hand until well combined.

Add salt and black pepper to the reserved onion juice. Shape the kofta mixture into logs, moistening your hands with the onion juice as you go, or brush the shaped kofta with the onion juice after forming them. Arrange the kofta on a baking sheet.

Grease a baking sheet with ghee, then place the kofta on it. Refrigerate for 30 minutes to 2 hours to help them firm up. Preheat the oven to medium heat. Bake the kofta in the preheated oven.

After about 30 minutes, the kofta should be cooked through. For extra flavor, light a piece of charcoal and place it in the baking sheet with the kofta. Drizzle ghee over the charcoal and quickly cover the tray to infuse the kofta with a smoky aroma. Enjoy!
